EXECUTIVE SUMMARY
The report analyses the problems faced by CoffeVille which supplies high quality coffee and hot and cold gourmet food and beverages to the customers in Melbourne’s Central business district (CBD). The company is experiencing the problem of decreasing revenue and rising costs. Management needs to analyse the reasons for increasing costs and decreasing revenue. Costs have increased because of inflation, although revenue has decreased because people find it expensive and they are shifting to more heathy options. To deal with this problem, company should change the menu and include some healthy options and try to include the cheaper options as well. The focus should also turn to give provide an experience to customers.
INTRODUCTION
CoffeeVille is a caf
é which supplies high quality coffee and hot and cold gourmet food and beverages to the customers in Melbourne’s Central business district (CBD). The atmosphere of the place is very friendly with the well trained staff and fast customer service. The managers as well as the owners are Emma and Rufus Belcastran. The first store was opened in 2009, post which the coffee shop has extended to four coffee shops. The coffee shop is currently targeting the 500 metres of the area which is about 45,000 people. Currently in order to expand the organisation, Rufus has taken the role of Operations Manager and Emma is focussing on marketing operations.
ANALYSIS
Problems and Issues
1. The expenses of the coffee shop is increasing and the sales are dropping. The managers need to figure out the possible cause behind increasing the expenses and how can they increase the sales.
2. Food prices like Coffee beans prices, red meat prices etc have been increasing in the market.
3. Wages cost has increased and training of the staff have added an additional burden of the cost. Rent expenses have also increased.
4. All the four store are experiencing under budget Food and Beverage sales since approximately one and a half year.
5. The sales in the month of November and December were decreasing despite of the fact that these two months used to be the busiest months. One of the major reason was people shifting to healthy food habits.
6. The decreasing revenue of the organization is raising concern among the staff members of losing their jobs.
7. Cheaper Alternatives are available and people are not preferring catering services. This implies that there has been a change in tastes and preferences of the people.
Recommendations
1. Cheaper Products: Since customers are shifting to the alternative or the competitors, CoffeeVille should add items on menu which cater to the different price ranges. Cheaper products should be included which will encourage the customers to opt for CoffeeVille and also add to repeated purchases. Analysing consumer spending patterns in 2011 and 201, we can see that there is no significant increase and the little increase has been only due to increased prices and not due to more sales.
2. To control the rising prices, they need to curate their menu. Adding the dishes to the menu which consist of the raw material which is cheaper. Also, they can categorise the menu based on premium on the product. They can have few products in normal range and few in premium or speciality range for which they can charge high prices. This will help to strike a balance between the revenue from the both.
3. From customer feedback we can interpret that many customers liked the service and the food and beverage tastes and quality, but price was a problem to many of them. Thus firm can do a survey in which they can analyse how much on an average a customer is willing to spend on the coffee and other foods and can decide the price and menu accordingly.
4. Since customers are shifting to healthy options, therefore the coffee shop should include more healthy options on the menu, this would be the trend setter and will attract more customers. They can include the food and beverages on the menu which are healthy options. For example, sugar free coffee, cakes with lesser sugar or fruit based sugar, salads etc. Having a combination of healthy food and tasty food will attract large number of customers.
5. Since many singles were visiting and not the couples, therefore, they can set up an environment which has a good ambience for couples. They can also set up an area where people can come to discuss about their meetings, read books as this will help them to increase their sales, as any time if a person comes, he or she would be more likely to grab something. Hence, focussing on attracting customers for some purpose like reading, meetings etc would help to boost the sales.

CONCLUSION
We analysed that CoffeeVille was experiencing decrease in sales and increase in cost structure. We also analysed the reason behind decrease in sales was the change in trend towards healthy food habits and people found prices to be high. Therefore to boost the sales, firm should include cheaper options in menu and more healthier options to attract the customers. The focus should also shift to building the right kind of ambience to attract customers for an experience. Hence, the managers should focus on ensuring that visiting a café becomes a kind of experience for the customer than just a place to buy food and beverage.

Decision or issue name
Diminished Returns are being experienced by the property developers and investors which has caused uncertainty about the future. This is due to slow down of economy and low business confidence. Many Australian cities are experienced this and the consumer spending has gone down. Many businesses are shifting from CBD to the fringes and suburbs. Since 2013, almost 16 small businesses and 10 medium sized businesses have shifted from CBD to nearby areas. They haven’t moved very far but within 5 km of CBD. The main reason behind this is due to the increasing rent structure, the vacancy rate has increased.
Decisions to be made
Major decisions which need to be made are as follows:
How to increase the sales or the decreasing revenue of the company – To increase the revenue prices need to be decreased for which the menu needs to be curated with dishes whose prices haven’t increased.
How to decrease the expenses of the firm – To decrease the expenses the firm needs to decide between training of the employees as it was adding up the cost. The payroll expenses in 2015 was as high as 45.3% from 34.9% in 2009. This was additional burden, therefore, they can go for selective training of staff. Also since the rental cost was increasing therefore, they may even consider shifting their businesses to other areas.
