[TOPIC 1: ITALIAN-AMERICAN CUISINE (INFLUENCE OF MIGRATION)]

During the late 18th century and the early 19th-century artisan, winemakers, ice cream makers from Europe took the same roots as the skilled labor forces. They started going out of Italy in search of a place where their products, skills and talents were paid a better amount. This started the cuisine of what we today known as the Italian American cuisine.
In the late 19th century, there was no great influence of Italian cuisines on the American lifestyle. Most of the restaurants in the US had a German influence (Lin, Cerros & Kumar, 2020). Dishes from spaetzle to sausages were common in that time. Gradually, the migrant Italians started coming in waves and with them, they brought the olives, the pasta and the pizza. The heavy on the sauce heavy on the cheese cuisines was considered the mark of happiness.

The very popular ‘mac and cheese’ was the first thing that went to be an iconic dish in American cuisine. The macaroni pasta and the cheese was the first Italian dish that sold as refined cuisine among other iconic dishes during that time. During the early 1800s, the Italian cuisine was referred to as foreign cuisine. For a cuisine to become prestigious, it had to travel from the poor people's meal to the rich man's platter.
