For each delivery: 1. Ensure stock handling and storage area is clean and free of vermin prior to stock delivery, and clean and sanitise area if required. One any one occasion out of the six, you will be asked to: o verbally explain to your assessor the hygiene and cleaning requirements for stock handling and storage area o verbally explaining to your assessor what signs you are looking for to indicate vermin infestation, and how you will deal with an infestation 2. Prepare equipment such as trolley or cart that you require to move stock into storage area. 3. Receive delivery and compare delivery docket to order form to ensure delivery docket is accurate. 4. Check the goods against the order and identify any discrepancies in the goods delivered (e.g. missing items, damage or spoilage); record discrepancies in the Incoming Stock Record. 5. In addition to recording discrepancies, verbally report discrepancies and deficiencies in the order to the supervisor (assessor). 6. Record quality and use-by dates of all goods in the Incoming Stock Record. 7. Transport stock to storage area, using suitable equipment and demonstrating safe manual handing techniques. 8. Label stock to identify delivery date and expiry date. 9. Store stock in appropriate areas using FIFO principles. 10. Use safe manual handling techniques when stocking shelves and moving stock in storage area. 11. While rotating stock, check the quality and labels of existing food stock and identify excess stock that cannot be used, or spoilt/ expired stock. 12. Report findings of stock check to supervisor (assessor). 13. Verbally explain to assessor the procedure you will follow to dispose of unusable food stock. 14. Identify hazardous materials that require disposal and verbally explain to assessor the procedure you will follow to safely dispose of hazardous materials. 15. Follow personal hygiene requirements after handling spoilt stock 16. Ensure that food items and non-food items are stored in a way that prevents cross contamination. 17. Enter the information in your Incoming Goods Record into your kitchen’s inventory management software or program. 19. Enter information about unusable stock identified and discarded during your rotation and stock check into your kitchen’s inventory management software or program. Your Assessor may deliberately place discrepancies and deficiencies in your order. Your Assessor may deliberately place deficient stock in the storage area when you rotate stock. Your assessor will observe your performance in this task and may ask you supplementary verbal questions. Your assessor will record and assess your performance in the Observation Checklist for this task. Assessment information
Purpose This document represents the main assessment instrument for the unit of
competency SITXINV001 - Receive and store stock
Unit description This unit describes the performance outcomes, skills and knowledge
required to check and take delivery of stock and appropriately store,
rotate and maintain the quality of stock items.
It does not include specialist stock control processes for perishable
foodstuffs which are covered by SITXINV002 Maintain the quality of
perishable items.
The unit is relevant to organisations where stock control is an integral and
essential part of business operations, and where there are control issues to
be considered. The unit is not appropriate for situations where stock
management is very simple, such as controlling stationery supplies in a small
office.
It applies to operational personnel who work with very little independence
and under close supervision. They apply little discretion and judgement and
follow predefined organisational procedures to report any stock-related
discrepancies to a higher level staff member for action.
The unit applies to all tourism, travel, hospitality and event sectors and to
any type of stock.
No occupational licensing, certification or specific legislative requirements
apply to this unit at the time of publication.

Assessment
Conditions
Skills must be demonstrated in an operational business where stock is
received and stored. This can be:
 an industry workplace
 a simulated industry environment.
Assessment must ensure access to:
 computers, printers and stock control software systems
 electronic equipment used for stock control
 diverse and comprehensive range of tourism, hospitality or event
industry stock items
 organisation specifications:
 current commercial stock recording procedures and documentation
for the receipt and storage of stock.
Assessors must satisfy the Standards for Registered Training Organisations’
requirements for assessors.
Pre-requisites There are no recommended pre-requisite units for this competency.
Terminology
used
The following terms are used in each assessment task to guide the student
and assessor as to what is expected from each assessment task:
1. Instructions: Provides a brief description about the assessment task and
broadly indicates what the Student is required to do.
2. Conditions of assessment: Outlines the conditions in which the
assessment must be undertaken. In some cases, it will give options for
the student about what to base the assessment task on and whether it is
practical demonstration or project.
3. Description of task/decision making rules: Advises the student and the
assessor of the task description and the criteria that the assessment must
meet in order for a satisfactory result to be awarded.
4. Due Date - the date on which assessment falls due.
Completing the
assessments/Ex
pectations
Assessors must ensure that students completely understand the assessment
process and various assessment tasks before undertaking the assessments.
This assessment tool is structured in a way that each assessment task clearly
outlines the:
• Instructions for completing the assessment task;
• Conditions in which the assessment must be conducted;
• Evidence that must be presented by the student; and
• Decision-making rules by which the evidence will be judged.

Every assessment task will require satisfactory completion in order for
students to be deemed Competent. The students will need to adhere to
any guidelines on length of answers required where stipulated. Please note,
a paragraph is three or more sentences.
Assessment Each assessment task has a section for the assessor recording the
assessment outcome as either ‘Satisfactory’ (S) or ‘Not Satisfactory’ (NS).
Once the student satisfactorily completes all assessment tasks, the assessor
will complete the assessment summary cover sheet and record either a

“Competent” (C) or “Not Competent” (NC) outcome.
When awarding any assessment result, assessors must ensure that feedback
for the student is recorded in the spaces provided after each assessment
