Scope Assignment – Baking and Supplying Bread to Tim Hortons 15% of final course grade The Assignment: Your company (Half Baked) bakes and supplies various bread products to supermarkets, sports venues, and commercial kitchens. Their list of goods include: · Croissants · Bagels · Hamburger buns · Sliced bread · Sourdough bread · Pita bread · Roti Based on the company’s success, Tim Hortons has put Half Baked on a short list of companies invited to bid on a contract to supply pita bread. Tim Hortons is planning to product pilot a new Mediterranean inspired sandwich across 50 of its busiest franchises beginning in October 2020. You must provide enough pita bread to supply the entire 6 months of the product pilot. Each of the 50 franchises will need 500 pitas per day starting in October 1st, 2020. Your assignment is to create a scope statement that will describe the scope of this project. The scope statement will include: · Project justification: – description of the need that the project is intending to address. Note: the project justification should address why/how the project will benefit Half Baked – not Tim Hortons (i.e. why Half Baked would take on this project). · Project summary: – high level description of the product or service being created by the project · Project deliverables: both in scope and out of scope deliverables (use an in-scope/out-of-scope table). Note: as part of your in-scope deliverables, you will need to provide a detailed description of the pita bread that Half Baked will supply to Tim Hortons. Indicate both ‘product’ and ‘project’ in-scope deliverables. · Project assumptions: for the purpose of this assignment, you may assume that Half Baked has the production capacity and staff to complete this project. 1. Project justification:
Half baked bread is also known as par baked or partially baked dough. The term itself defines it methodology. Par
baked or the half-baked bread less time for baking and its healthy. The bread can be removed from the oven before its complete the full (Finot, n.d.)baking process and the crust can customize. The half-baked bread can be stored under suitable temperature and frozen within the shelf life else if can be packed immediately as per the requirements. The half-baked bread advantage is that the time takes to finish the baking process is much quicker that the full baked bread from dough. Refer to the project plan 50 franchises will need 500 pita per day. This target can only be delivered by the half-baked bread. In comparison with the frozen bread some research evident that it is the healthier product. Half baked bread can be used for fresh sandwich or other baking products. It can store up to 12 months. Best part is taste and the nutrients will be same every time its fully baked.
